Pinot Nero Alto Adige DOC

 

Our Pinot Noir is made from select grapes, picked by hand at different times in consideration of the different ripening times of the various lots. Generally the harvest takes place between the end of September and the first half of October. After the pressing and the destemming of the grapes, the must is placed with the skins in wooden vats. This is followed by at least 3-4 days of pumpovers to extract all the colors. Once this is done we add the most appropriate yeasts for red wines and at the end of the fermentation we leave the wine alone to steep for another week. Subsequently the wine is drained and pressed. We only add the first pressings to our bottled wines, as they are the best ones, and keep the rest to use as family table wine. 

The resulting wine is aged in barrique for approximately a year, where the malolactic fermentation takes place. The mass is then placed in a single steel vat and left to age for another six months before being bottled. 

After that, it will be another 20 to 26 months before the wine is ready to be sold.
